Banana Muffins With Chocolate Chips

  • 3 very ripe bananas
  • 1/4 cup melted butter
  • 1 egg
  • 1 cup sugar (may use only 3/4 cup)
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup milk chocolate chips

Directions:

Preheat oven to 350 degree Fahrenheit.

Prepare muffin pans with cupcake liners. Blend first five ingredients together in a medium bowl with an electric mixer to mash bananas well. Combine flour, salt, and baking soda together in a small bowl. Add to banana mixture. Stir with wooden spoon. Gently stir in milk chocolate chips. Fill muffin cups 3/4 full. Bake for 25 minutes or until a toothpick inserted in the center a muffin comes out clean. Cool on wire rack 10 minutes. Remove from pan. Cool completely or serve when still warm (with a little butter!).

Muffins may be stored in a Ziploc bag in the freezer for several weeks. To serve, cook in microwave on defrost setting for one minute.
