Mexican Soup

  • 1 pound ground beef (browned and drained) *Can substitute ground turkey
  • 2 cans Ro-Tel tomatoes
  • 1 can corn
  • 1 can pinto beans
  • 1 can black beans
  • 2 cans hominy
  • 1 package Ranch salad dressing mix
  • 1 package taco seasoning
  • Toppings: Greek yogurt (sour cream), grated cheddar cheese, Fritos

Directions:

Brown the beef. Drain. Combine all ingredients in Dutch oven. Simmer about half an hour. Serve with Greek yogurt, grated cheddar cheese, and Fritos. (Freezes well!)
